Ingredients
- 1 handful chives
- 3 tbsp white balsamic vinegar
- Salt
- black pepper (freshly ground)
- a pinch sugar
- 5 tbsp olive oil
- 500 g cocktail tomatoes (red and yellow)
- 500 g mozzarella
- 0.5 honeydew melon
Instructions

Wash the chives, pat dry, and cut into fine ribbons. Whisk together balsamic vinegar, salt, pepper, sugar, chives, and olive oil to make a vinaigrette.

Rinse the tomatoes and pat dry; drain the mozzarella. Halve the honeydew melon, remove seeds, and use a melon baller to form small balls (aim for about 350 g of melon balls).

Combine all balls in a large bowl with the vinaigrette and let rest for at least 20 minutes. Then serve in small bowls or colorful cups, garnished with toothpick sticks.
