Ingredients
- 500 g thin leeks
- 4 hard‑boiled eggs
- 0.5 tsp mustard
- 4 Tbsp sunflower oil
- 3 tbsp white wine vinegar
- Salt
- Pepper
- 0.5 bunch Chives

Clean the leeks, trim ends, wash and cut the white and light green parts into thick rings. Peel the eggs. Wash the chives, shake dry and cut into ~1 cm pieces.

Whisk mustard with vinegar, salt and pepper, then slowly whisk in the oil. Combine all ingredients and serve in bowls with baguette slices.
