Ingredients

  • 1 Red Onion
  • 1 Garlic clove
  • 3 green peppers (canned)
  • 6 sun-dried tomatoes (soft)
  • 250 g cherry tomatoes (yellow and red)
  • 1 handful parsley
  • 2 tbsp balsamic vinegar
  • 1 tbsp Lemon Juice
  • Salt
  • a pinch sugar
  • black pepper (ground)
  • 2 tbsp olive oil
  • 100 g feta cheese
  • 4 small flatbreads
  • basil for garnish

Instructions

    Peel the onion and garlic; dice the onion finely and mince the garlic. Drain the peppers and slice into rings. Chop the sun-dried tomatoes. Wash, pit, and slice the cherry tomatoes. Rinse the parsley, shake dry, pluck leaves and chop.

    In a bowl whisk balsamic vinegar with lemon juice, salt, sugar, and pepper. Add olive oil and combine all prepared ingredients. Crumble feta on top, mix well, and let rest for about 10 minutes before serving.

    Grill the flatbreads until lightly charred. Taste the salsa, spread over the breads, and serve garnished with basil.
