Tomato Cold Salad

Ingredients

  • 1 kg tomatoes
  • 1 onion
  • 3 Garlic cloves
  • 1 bunch parsley
  • 1 bunch Basil
  • 2 sprigs thyme
  • 1 sprig lovage
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 2 slices rye bread
  • 3 tbsp butter

Instructions

    Wash tomatoes, quarter them and remove seeds. Peel and quarter the onion and garlic. Blend tomatoes with chopped herbs, onion, and salt in a blender, then strain through a sieve if desired.

    Season soup with salt and pepper, stir in olive oil. Dice bread, toast it in butter, and sprinkle over the salad.
