Spicy Mandarin Salad with Yogurt Dressing

Ingredients

  • 3 clementines
  • Juice of one Clementine
  • 2 shallots (or 1 onion as substitute)
  • 200 g Brie cheese
  • 250 g yogurt
  • 16 chicory leaves (1–2 stems)
  • 2 tsp sharp mustard
  • 3 tbsp Lemon juice
  • Pepper
  • Salt
  • 0.5 bunch Parsley

Instructions

    Peel two mandarins, cut into segments and halve them. Squeeze one mandarin for juice. Dice the Brie and finely chop the shallots. Set aside a few parsley sprigs for garnish, finely chop the rest. Combine Brie with mandarin pieces, shallot bits, chopped parsley, lemon juice, salt, and pepper in a bowl and mix well.

    Wash chicory leaves and fill them with the mixture. Arrange 3–4 filled leaves per plate. Garnish with parsley. Mix yogurt with mustard and mandarin juice, season with salt and pepper, and serve alongside the stuffed chicory leaves.
