Ingredients

  • 300 g raw cane sugar
  • 40 g honey
  • 5 tbsp water
  • 100 g whipping cream
  • 50 g dark bittersweet chocolate (at least 70% cocoa)

Instructions

    Add sugar, honey and water to a pot, heat and simmer for 2–3 minutes over medium heat while stirring until bubbling.

    Pour cream into a large pot and bring to boil; melt chocolate in it, then pour caramelized sugar mixture in and stir. Cook for about 15–20 minutes until a brown mass forms. Test by dropping a bit onto a cool plate – if it hardens, it's ready.

    Line a rectangular pan with parchment paper and lightly oil if needed. Pour the mixture into the pan and let cool. Once set, lift from the pan, cut into squares with an oiled knife, and allow to fully chill before serving.
