Raspberry Shortbread Cookies

Ingredients

  • 250 g flour
  • 1 tsp Baking Soda
  • 80 g sugar
  • 1 packet vanilla sugar
  • 170 g melted butter
  • 150 g raspberry jam
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 180°C with upper and lower heat. Mix the flour with the baking soda, sugar and vanilla sugar and fold in the melted butter. Using a teaspoon, cut 3-4 cm dough pieces and place them on a parchment-lined baking tray. Bake in the preheated oven for about 10 minutes until light brown.

    Remove and cool on a kitchen rack. Warm the jam and strain it through a sieve. Spread jam on half of the cookies and sandwich with another cookie. Dust with powdered sugar before serving.
