Tiramisu with Löffelbiskuits and Espresso

- 1 sheet gelatin
- 3 egg yolks
- 3 tbsp honey
- 2 double espresso shots
- 300 g mascarpone
- 100 ml whipping cream
- 30 g powdered sugar
- 16 Löffelbiskuits
- Chocolate coffee beans (for garnish)
- cocoa powder (to dust)

Soak the gelatin in cold water. Whisk the egg yolks with honey until pale and frothy for about 5 minutes. Squeeze out excess water from the gelatin and dissolve it in one of the hot espresso shots. Fold the mascarpone into the egg foam, then stir in the espresso with gelatin. Beat the whipping cream with powdered sugar until stiff peaks form, and gently fold this into the mixture.

Break the Löffelbiskuits into pieces and distribute half into four glasses. Drizzle the remaining espresso over them and pour half of the cream into each glass. Top with the rest of the biscuits and the remaining cream. Chill in the refrigerator for about 3 hours. Just before serving, dust with cocoa powder and decorate with chocolate coffee beans.
