Tiramisu with candied fruit

Ingredients
- 350 g Amarettini
- Amaretto (almond liqueur)
- 350 g mascarpone
- 2 tsp lemon zest
- 2 tsp lemon juice
- 2 egg whites (very fresh)
- Salt
- 2 tbsp powdered sugar
- 4 tbsp cocktail cherries (chopped)
- cocoa powder (for dusting)

Place the Amaretti in a freezer bag, seal it, roll over with a rolling pin and crush roughly. Beat the egg whites with a pinch of salt into stiff peaks. Mix mascarpone with powdered sugar, lemon zest and juice, then fold in the meringue.

Distribute half of the cookie crumbs into the provided glasses and drizzle each with 1-2 tbsp Amaretto liqueur, then spread half of the mascarpone cream on top. Sprinkle the remaining cookies over it, drizzle again with 1-2 tbsp Amaretto liqueur, add cocktail cherries, and finish with the remaining cream. Chill for about 1 hour to set. Dust with cocoa before serving immediately.
