Ingredients
- 1 orange
- 125 g amarettini
- 300 g mascarpone
- 1 tbsp sugar
- 1 packet vanilla sugar
- 1 egg

Peel the orange thoroughly with a sharp knife, removing all white membranes. Then cut out the segments along the natural sections.

Catch the juice that pours out and squeeze any remaining pulp by hand.

Cut the orange segments into small pieces. Roughly crumble the amaretti.

Separate the egg. Beat the yolk with mascarpone, orange juice, sugar, and vanilla sugar. Whisk the egg white until stiff peaks form and fold it in gently.

Just before serving, fold the orange pieces and amaretti lightly into the cream and distribute over dessert glasses.
