Ingredients

  • Pflanzenöl (for the baking pan)
  • 75 g millet flour
  • 40 g cocoa powder
  • 50 g finely ground almonds
  • 1 tbsp coconut flakes
  • 1 tsp Baking powder
  • 1 pinch Cinnamon powder
  • 1 g xanthan gum
  • 1 pinch salt
  • 0.5 tsp espresso powder
  • 1 pinch baking soda
  • 1 pinch chili powder
  • 1 pinch ground cloves
  • 1 tsp flaxseed
  • 120 ml agave syrup
  • 120 g Applesauce
  • 2 tbsp Coconut oil
  • vanilla aroma
  • 60 g powdered sugar
  • 40 g cocoa powder
  • 2 tbsp rice drink (rice milk)
  • vanilla salt

Instructions

    Preheat the oven to 200°C fan. Grease a donut baking tray with oil.

    In a bowl mix millet flour, cocoa, almonds, coconut, baking powder, cinnamon, xanthan gum, salt, espresso powder, baking soda, chili and cloves well. Grind flaxseed finely and stir with 50 ml water; let stand for about 10 minutes. Then add agave syrup, applesauce, coconut oil and vanilla aroma, and whisk until creamy and airy using a food processor or hand mixer. Gradually add the flour mixture and mix thoroughly. Add about 120 ml water until a spreadable dough forms. Fill the depressions (about half full) of the baking tray and wipe the edges clean. Bake in the oven for 10-15 minutes. Remove and cool on a wire rack.

    For glazing, whisk powdered sugar with cocoa powder in a bowl and gradually stir in rice milk until a thick glaze forms.

    Release the donuts from the pan, coat them with the glaze and let dry slightly. Sprinkle with a little vanilla sea salt and allow to dry completely.
