Thüringer Dumplings

Ingredients
- 2 kg starchy cooking potatoes
- Salt
- 2 slices white bread
- 2 tbsp butter
- nutmeg

Wash 750 g of potatoes and boil in salted water for about 30 minutes.

Remove the crust from the white bread, cut into small cubes, and fry in hot butter until golden yellow all around. Remove and drain on kitchen paper.

Peel the boiled potatoes and press them through a potato masher. Peel the remaining potatoes, grate finely, and squeeze well with force. Catch the juice and wait until the starch settles, then pour off the water and add the starch to the pressed potatoes. Add the mashed potatoes as hot as possible over the grated potatoes, season with salt and nutmeg, mix well, and shape into dumplings. Place a few croutons in the center of each dumpling. Drop the dumplings into boiling salted water, reduce heat, and let them cook for about 25 minutes.
