Ingredients

  • 400 g rhubarb
  • 400 g Strawberries
  • 3 untreated oranges
  • 1 vanilla bean (inside)
  • 500 g gelesugar (2:1)

Instructions

    Wash, trim, and chop the rhubarb and strawberries. Rinse the oranges hot, pat dry, grate the peel, then peel thoroughly removing the white pith. Separate the fruit segments from the membranes and cut them small.

    Collect the juice that drains out and press the remaining pulp. Mix the juice with the zest, fruit segments, rhubarb, strawberries, vanilla, and sugar in a pot and let it steep for 1 hour. Bring to a boil and simmer for 4 minutes, stirring occasionally.

    Fill the jam into well-sauced jars, seal tightly, and place upside down for 10 minutes. Then turn upright and allow to cool completely. Store the jam in a cool dark place. Serve by pouring into small glasses.
