Ingredients

  • 2 kg tomatoes
  • 2 red onions
  • 20 g Ginger
  • 2 tbsp olive oil
  • 150 g brown sugar
  • 2 tbsp red curry paste
  • 250 ml rice vinegar
  • 50 ml Soy sauce

Instructions

    Wash the tomatoes, remove stems and roughly cube the flesh. Peel and dice the onions; peel and grate the ginger on the fine side of a kitchen grater.

    Heat the olive oil in a pot and sauté the onions until translucent. Add tomatoes, ginger, sugar, curry paste, and rice vinegar; bring to a boil. Simmer uncovered over low heat for about 45 minutes until thickened. Blend with a stick blender, season with soy sauce and additional sugar if needed. Strain through a fine sieve, re‑bring to a boil, then pour hot into sterilized bottles. Seal and let cool.
