Ingredients

  • 1 cucumber
  • 1 Mango
  • 2 small red chilies
  • 4 sprigs cilantro
  • 2 tbsp chopped peanuts
  • 2 tbsp sherry vinegar
  • 50 ml peanut oil
  • Salt
  • sugar

Instructions

    Wash, peel, and halve the cucumber lengthwise. Slice into rounds and place in a bowl. Peel the mango and dice the flesh. Wash, deseed, and chop the chilies.

    Wash the cilantro, pat dry with paper towel, and finely chop the leaves. Add the mango cubes, chili, peanuts, and cilantro to the cucumber slices; mix with vinegar and peanut oil and season with salt and sugar.
