Thai Melon Salad

Thai melon salad by Spoonsparrow is the perfect meal for hot days.

Ingredients

  • 500 g Galia melon (1 Galia melon)
  • 500 g watermelon flesh
  • 1 red chili pepper
  • 60 g roasted unsalted peanuts
  • 1 Organic Lime
  • 2 tbsp sesame oil
  • 1 tbsp liquid honey
  • 1 tbsp Thai fish sauce
  • 10 g parsley (0.5 bunch)
  • 10 g cilantro (0.5 bunch)

Instructions

    Halve the Galia melon, peel and core it. Cut both Galia and watermelon flesh into cubes and place them in a bowl.

    Wash, trim, halve, de-seed the chili peppers and slice them into thin strips. Finely chop the peanuts and add both to the melon cubes.

    Rinse the lime under hot water, pat dry, grate its zest finely, then squeeze out the juice. Mix sesame oil with honey, fish sauce, 4 tbsp lime juice and lime zest. Wash, shake dry and chop parsley and cilantro. Combine herbs and vinaigrette with the melon cubes.
