Radicchio Pear Salad with Hazelnut Vinaigrette

Try the delicious radicchio and pear salad with hazelnut vinaigrette from Spoonsparrow!

Ingredients

  • 150 g radicchio (1 head)
  • 40 g watercress (1 handful)
  • 2 ripe pears
  • 4 tbsp hazelnut oil
  • 2 tbsp lemon juice
  • Salt
  • Pepper
  • 50 g hazelnuts

Instructions

    Separate the leaves from the radicchio. Wash, dry and tear into bite‑sized pieces.

    Wash and dry the watercress. Wash the pears, quarter them, remove the cores and cut into wedges.

  3. 3.

    Mix the oil with lemon juice and season with salt and pepper. Roughly chop the hazelnuts.

    Arrange the radicchio and watercress on four plates, top with pear wedges, drizzle with vinaigrette, sprinkle with hazelnuts, and adjust seasoning with extra pepper if desired.
