Ingredients

  • 200 g strawberries
  • 100 g raspberries
  • 250 g yogurt
  • 50 ml crème double
  • 1 untreated lemon (zest)
  • 6 sheets gelatin
  • 40 ml orange liqueur (e.g., Grand Marnier)
  • 50 ml cold whipping cream
  • 3 egg whites
  • 50 g sugar
  • 20 ladyfingers
  • red currants (for garnish)

Instructions

    Wash the fruit, pat dry with paper towels and cut the strawberries into small pieces. Mix the yogurt, crème double, and lemon zest together. Soak the gelatin in cold water.

    Warm the orange liqueur in a small saucepan and dissolve the pressed gelatin in it. Stir the dissolved gelatin into the yogurt mixture. Whip the cream stiffly. Beat the egg whites with the sugar until firm peaks form. First fold the whipped cream, then gently fold the beaten egg whites together with the fruit into the yogurt mixture.

    Line a terrine mold with cling film. Place the ladyfingers along the inner rim of the mold. Pour in the yogurt mixture and cover the mold. Chill in the refrigerator for about 4 hours. To serve, lift out using the cling film.
