Ingredients

  • 350 g spelt flour type 1050
  • 250 g butter
  • 1 egg
  • a pinch of salt
  • 130 g whole grain sugar
  • 4 tart apples
  • ½ lemon
  • 1 tbsp honey
  • 75 g ground almonds
  • 1 tsp cinnamon powder

Instructions

    Quickly knead 250 g flour, 150 g cold butter in pieces, the egg, salt and 65 g sugar into a smooth dough. Add a little cold water or more flour if needed. Shape into a ball, cover and refrigerate for about 30 minutes.

    Wash the apples, quarter them, remove the core, and cut the quarters into strips. Squeeze lemon juice and mix with apple strips.

    Roll out the dough and place it in a greased pan if needed. Shape a rim. Arrange the apples fan‑shaped on the bottom and drizzle with honey.

    For the crumble, grate the remaining flour with almonds, cinnamon, remaining sugar and cold butter between your hands into crumbs and sprinkle over the apples. Bake in preheated oven at 180°C (fan: 160°C; gas: level 2–3) for about 45 minutes until golden brown.

    Let cool in the pan and serve cut into pieces.
