Ingredients

  • 250 g macaroni
  • Salz
  • 1 kg broccoli
  • 250 ml heavy cream (at least 30% fat)
  • 3 eggs
  • 100 g Gouda cheese
  • paprika powder
  • 1 bunch Basil
  • Pfeffer (ground)
  • 1 egg
  • 1 EL lemon juice
  • 100 ml plant oil
  • 150 g crème fraîche
  • 2 EL tomato paste
  • 1 tomato

    For the tomato cream separate the egg. Beat the yolk with salt and lemon juice and whisk in the oil gradually. Stir in the crème fraîche and tomato paste, season with salt and pepper. Whisk the egg white until stiff peaks form and fold it into the mixture. Wash, halve, seed, finely chop the tomato and sprinkle over the cream. Transfer the terrine to a plate, slice, garnish with basil leaves and serve. Offer the tomato cream separately.
