Ingredients

  • 4 Porterhouse steaks (5 cm thick)
  • 1 clove garlic
  • 1 tbsp oil
  • 1 tsp black pepper
  • oil for brushing
  • 200 g Sour Cream
  • 1 clove garlic
  • Salt
  • white pepper
  • homemade potato chips

Instructions

    Trim the fat edge of the steaks to about 6 mm and cut a shallow slit every 3 cm. Halve the garlic clove and rub the meat on both sides with garlic.

    Crush the pepper coarsely, mix with oil, and coat the steaks. Place on a plate, cover, and let rest for about an hour.

    For the sauce, remove the garlic skin, finely chop it, and mix with sour cream. Season with salt and pepper to taste.

    Sear each steak in a grill pan for 1–2 minutes per side, then continue cooking over medium heat: about 4 minutes per side for rare or 6 minutes for pink. Wrap the meat in foil and bake at 80 °C for 10–15 minutes, then rest.

    After baking, separate the meat from the bone and slice thinly against the grain.
