Ingredients

  • 300 g flour
  • 125 g sugar
  • 1 packet vanilla sugar
  • zest of 1 lemon
  • 200 g cold butter
  • 1 egg (size M)
  • 150 g ginger marmalade
  • powdered sugar (for dusting)

Instructions

    Mix flour, sugar, vanilla sugar and lemon zest in a bowl. Add butter pieces and egg, then cut everything with a knife until dry crumbs form. Quickly knead the dough by hand into a smooth ball. Wrap the dough in cling film and refrigerate for about 1 hour. Roll out the dough on a floured surface to a thickness of about 2 mm. Cut oval-shaped cookies in leaf shapes in three sizes (largest about 7 cm long) with the smaller ones proportionally smaller).

    Place the cut shapes on baking trays lined with parchment paper. Bake in a preheated oven at 175 °C (gas: level 2‑3, fan: 160 °C) for about 10 minutes. Let the cookies cool on wire racks. Warm the marmalade slightly and sandwich the cookies together with it. Dust with powdered sugar.
