- 200 g Flour
- 1 pinch salt
- 1 tsp sugar
- 100 g cold butter
- 1 egg
- 5 pears
- 1 lemon (juice)
- 75 g soft butter
- 200 g sugar
- 4 piment seeds

For the dough sift the flour onto a work surface, mix with salt and sugar and press a well in the center. Cut the cold butter into small pieces, distribute around the well, add the egg to the center and use a knife to cut through all ingredients until small crumbs form; quickly knead by hand into a dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

Wash, peel, quarter the pears and remove the core. Drizzle with lemon juice. Line a tart pan thickly with 50 g butter. Sprinkle a thick layer of sugar (about 100 g) over the butter and arrange the pear pieces tightly together on top.

Heat the baking dish over medium heat for about 15 minutes, then remove from the stove when the sugar begins to caramelize; let it cool briefly, then sprinkle the remaining sugar and scatter the rest of the butter in flakes over the pears.

Preheat the oven to 200 °C (400 °F) with both fan and top heating.

Roll out the dough, lay it over the pears and press the edges down into the pan.

Bake the tart in the preheated oven for about 30 minutes, remove, let cool slightly, carefully flip onto a plate and serve warm sprinkled with crushed piment seeds.
