Ingredients
- 800 g large shrimp (deveined and peeled except for tail segment)
- 1 netted melon
- 1 Spring onion
- 4 tbsp lime juice (freshly squeezed)
- 1 tbsp lemon juice (freshly squeezed)
- 3 tbsp organic lemon zest
- 4 tbsp yogurt (1.5% fat)
- Salt
- Pepper (freshly ground)

Instructions

Halve the netted melon, remove seeds, cut into strips, peel skin and dice flesh. Trim and wash spring onion, slice into small rings, then mix with melon.

Whisk yogurt with 1 tbsp oil, lemon juice, salt and pepper.

Heat 2 tbsp oil in a pan and fry shrimp for 2-3 minutes until golden brown. Season with salt, pepper and lime juice. Arrange melon-onion mixture with shrimp on plates, drizzle yogurt sauce and sprinkle lemon zest before serving.
