Tajine with Braised Chicken and Onions

Ingredients
- 1 chicken (ca. 1.2 kg, ready to cook)
- Salt
- black pepper (freshly ground)
- 4 onions
- 1.5 preserved lemons
- 50 g butter
- 2 tbsp olive oil
- 3 Garlic cloves
- 1 tsp ginger powder
- 0.5 can saffron
- 250 ml poultry stock

Rinse the tajine well. Wash the chicken, pat dry, cut into 8 portions, rub with salt and pepper, and set aside. Peel the onions and slice into rings. Rinse the preserved lemons, pat dry, then cut into small pieces and set aside. Heat butter and oil in the tajine, add onions and sauté until translucent. Add crushed garlic, ginger, saffron, and stock; stir well, season with salt and pepper. Add chicken pieces, cover, and simmer gently for about 45 minutes. If needed, add a little more stock during cooking.

Stir in the lemons, cover, and simmer for another ~15 minutes. Taste and serve immediately.
