Tajine with Chicken, Olives and Lemon

Ingredients
- 1 chicken
- 200 g chicken liver
- 2 onions
- 50 g black olives
- 400 ml Poultry broth
- 0.5 bunch Parsley
- 0.5 bunch coriander
- 2 Garlic cloves
- 0.5 tsp cumin
- 0.5 tsp ginger powder
- 1 pinch saffron
- 100 g pickled lemons (specialty store, glass or can)
- Lemon juice
- Salt
- pepper (ground)

Wash the chicken, break it into pieces, cut meat from bones and cube to bite size.

Halve the lemons, scoop out the flesh with a spoon, dice it and slice the rind into strips. Mix the lemon flesh with onions, garlic and chopped herbs into the chicken meat, cover and refrigerate overnight. Then add spices to a tajine, pour in cold broth, cover, bring to boil and simmer for about 30 minutes.

Wash the chicken liver and cook in boiling salted water for 1-2 minutes. Cool and cube.

Peel and finely dice onions and garlic. Add them with olives to the tajine, stir, and cook another 10-15 minutes until done. Finally sprinkle lemon zest over the dish, season with lemon juice, salt and pepper, and serve.
