- 1 Chicken (ca. 1.4 kg, ready to cook)
- 1 Bund Thyme
- 4 untreated lemons
- 2 EL olive oil
- salt
- pepper (from the grinder)
- 1 EL honey
- 4 shallots
- 2 fresh garlic bulbs
- Fat (for the pan)

Preheat the oven to 180°C fan-forced. Wash and pat dry the chicken. Rinse and shake off the thyme. Rinse the lemons hot. Cut one lemon in half, squeeze out the juice, slice another into rounds and mix with some olive oil, half the herbs, salt and pepper. Stuff the chicken with this mixture and tie the legs together. Whisk the lemon juice with honey, oil, salt and pepper and brush the chicken with it.

Halve the remaining lemons and place them in an oiled baking dish. Peel the shallots, halve the garlic bulbs and add them with the chicken to the lemons. Sprinkle the rest of the herbs on top and bake in the preheated oven for about 1 hour. Baste the chicken frequently with the drippings. Serve immediately.
