Ingredients

  • 1 untreated lime
  • 400 g heavy cream
  • 400 ml fish stock (glass)
  • 0.5 tsp dried green peppercorns (coarsely crushed)
  • Salt
  • 400 g tagliatelle
  • 500 g raw shrimp tails (peeled and deveined)

    Wash the lime hot, thinly peel the zest and cut into fine strips; set aside. Squeeze half a lime. Bring cream and fish stock to a boil with lime juice, reduce by half, season with green peppercorns and salt, taste.

    Cook tagliatelle in plenty of boiling salted water until al dente according to package instructions. Rinse shrimp tails cold and let them simmer in the lightly bubbling sauce for about 3–4 minutes. Plate the tagliatelle, top with shrimp, garnish with lime zest, and serve.
