Grilled Tuna Steaks with Citrus Salsa

Ingredients
- 4 tuna steaks (160 g each, ready to cook, skinless)
- 1 red chili pepper
- 2 untreated limes
- 4 tbsp olive oil
- 1 tbsp white rum
- 2 Grapefruits
- 2 untreated oranges
- 150 g kumquats
- 2 Spring Onions
- 0.5 untreated lime (zest)
- 0.5 Red chili pepper
- Sea salt
- lemon herb

Wash the tuna and pat dry. Wash the chili, halve it lengthwise, deseed and finely chop. Rinse limes hot, grate the zest and squeeze the juice. Mix with chili, oil and rum and brush the tuna steaks. Cover and marinate for about 30 minutes.

Meanwhile peel grapefruits and oranges, removing the white pith and cutting fillets from the segments. Wash kumquats, dry rub and halve them. Wash spring onions, trim, shake dry and slice into thin rings. Cut lime zest into fine strips. Wash chili, trim and dice finely.

Mix citrus fillets with kumquats, spring onions and lime zest; season with salt. Remove tuna from the marinate, drain well and quickly sear in a hot grill pan on both sides. The tuna should remain slightly raw inside. Arrange steaks on plates, sprinkle sea salt and serve with the salad. Garnish with lemon herb as desired.
