Tagliatelle with Fish

Ingredients

  • 400 g tagliatelle
  • 100 g butter
  • 150 ml Heavy Cream
  • 1 EL lemon juice
  • 2 EL mustard
  • 400 g fish fillet (as desired)
  • 2 EL flour
  • 1 EL clarified butter
  • Salt
  • Pepper
  • 2 EL pine nuts
  • Basil

Instructions

    Cook pasta in plenty of boiling salted water until al dente.

    Toast pine nuts in a dry pan without oil.

    Cut fish into bite-sized pieces, drizzle with lemon juice, season with salt and pepper, then dust with flour.

    Heat clarified butter in a skillet and brown the fish pieces over high heat all sides; keep warm.

    Melt butter in a pot with mustard, gradually whisk in heavy cream, season with salt and pepper, and keep warm.

    Drain pasta, let it dry slightly, then plate with fish pieces and sauce, topping with pine nuts.
