Tabbouleh with Colorful Vegetables

Ingredients
- 200 g fine bulgur
- 1 cucumber
- 3 tomatoes
- 1 mild red onion
- 2 handfuls parsley
- 2 lemons
- 4 tbsp olive oil
- Salt
- pepper (from the mill)
- 2 tbsp flaxseeds

Cover the bulgur with lukewarm water and let it soak for about 20 minutes. Peel the cucumber and dice it small. Wash the tomatoes, remove the stem ends, and dice them small as well. Peel the onion and finely chop it. Rinse the parsley, shake dry, set aside a few leaves for garnish, and finely chop the rest. Halve the lemons and cut one into wedges; squeeze out juice from the remaining ones.

Whisk lemon juice with oil and season with salt and pepper. Drain the bulgur, rinse cold, press out excess water, and mix in a bowl with the flaxseeds. Add the vegetables and dressing, combine, taste, and let it rest for about 30 minutes.

Taste again before serving, garnished with lemon wedges and parsley.
