Beetroot Sprat Salad

Ingredients

  • 600 g beetroot
  • 8 sprat fillets (or Bismarck herring)
  • 2 tart apples
  • 2 red onions
  • 100 g mayonnaise
  • 2 tbsp yogurt
  • 1 tsp lemon juice
  • 1 tsp liquid honey
  • pepper (ground)
  • Salt
  • fresh chopped dill (for garnish)

Instructions

    Wash the beetroot and steam it for about 50 minutes until cooked. Then let it cool to lukewarm.

    Pat the sprats dry and cut them into bite-sized pieces. Wash the apples, halve them, remove the core, and dice the halves finely. Peel the onions, halve them, and slice into strips.

    Whisk the mayonnaise with the yogurt and season with lemon juice, honey, pepper, and a pinch of salt. Dice the beetroot. Combine the beetroot, apple, and onion with the dressing, taste, and serve garnished with dill.
