Ingredients

  • 2 stalks chicory
  • 2 Nectarines
  • 2 tbsp butter
  • 100 g whipping cream
  • 300 g Ground Beef
  • 1 bunch parsley
  • 1 slice toast bread
  • 4 tbsp whipping cream
  • 1 egg yolk
  • 1 tsp Mustard
  • 20 g clarified butter
  • Salt
  • Pepper

Instructions

    Dice the toast and soak in cream. Mix with ground beef, egg yolk, salt, pepper, and mustard. Wash and finely chop parsley, then fold into the mixture. Form balls from the dough and fry in hot clarified butter for about 7 minutes until browned.

    Cut chicory lengthwise, remove the core, split into individual leaves. Wash nectarines, pat dry, halve, pit, and slice into thin strips. Heat butter and briefly sauté the strips, then add chicory leaves and cook for 2 minutes. Deglaze with cream, season with salt and pepper. Let cool, plate on dishes, and top with warm or cold meatballs.
