Ingredients

  • 2 swordfish fillets
  • 0.5 bunch cilantro
  • 100 g bamboo shoots
  • 6 Thai shallots
  • 1 red bell pepper
  • 2 stalks lemongrass
  • 1 tbsp ginger (finely chopped)
  • oil (for frying)
  • tamarind sauce

Instructions

    Slice the swordfish fillets into strips and fry in hot oil. Remove and bake in a preheated oven at 100 °C with both top and bottom heat until translucent.

    Add the shallots, halved lemongrass, sliced bamboo shoots, bell pepper, and ginger to the oil one after another and sauté until golden brown. Remove, arrange on a plate, place the fish on top, and garnish with chopped cilantro. Serve with tamarind sauce in a small bowl so each can season individually.
