Pork Ribs with Barbecue Sauce

- 1 onion
- 2 Garlic cloves
- 2 tbsp plant oil
- 200 g ketchup
- 50 ml apple cider vinegar
- 75 g brown sugar
- 2 tbsp Worcestershire sauce
- chili powder
- Salt
- ground pepper
- 2 kg spare ribs

Peel the onion and garlic. Finely chop both and sauté briefly until translucent in hot oil. Add ketchup, a splash of water, and vinegar. Stir in sugar, Worcestershire sauce, chili powder, salt, and pepper; bring to a boil. Reduce heat to low, cover partially, and simmer gently for about 15 minutes, stirring occasionally, until the desired consistency is reached. Remove from heat and taste.

Rinse the ribs, pat dry, and brush with some sauce. Let rest for about 30 minutes. Then grill over low heat (maintaining distance from coals) for approximately 40 minutes, turning regularly and basting with barbecue sauce as needed. Adjust time based on thickness.
