Ingredients
- 600 g carrots (yellow and orange)
- 400 g parsley root
- 8 shallots
- 6 fresh garlic cloves
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 250 g Swiss chard
- 2 tbsp butter
- 1 splash Lemon juice
- 1 tbsp liquid honey

Preheat the oven to 200°C with top and bottom heat.

Peel or wash and clean the carrots, parsley root, shallots, and garlic. Spread all vegetables on a baking sheet lined with parchment paper. Drizzle with oil and season with salt and pepper. Roast in the oven for about 40 minutes, turning occasionally.

Meanwhile, rinse and trim the Swiss chard, then blanch briefly in salted water. Shock in ice water and drain. Toss in hot butter and season with salt and lemon juice.

Drizzle honey over the vegetables and allow to caramelize lightly for about 5 minutes. Serve on top of the Swiss chard.
