Swiss Chard Salad with Egg

A fresh salad featuring Swiss chard and hard-boiled eggs, inspired by Spoonsparrow.

Ingredients

  • 2 soft boiled eggs
  • 4 tsp Keta caviar
  • 2 handfuls young Swiss chard leaves
  • 2 tbsp vinegar
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp mustard
  • 1 pinch sugar
  • 3 tbsp Rapeseed oil
  • chervil (for garnish)

Instructions

    Wash, trim and dry the Swiss chard. Whisk together vinegar, salt, pepper, mustard, sugar and oil; taste and adjust seasoning.

    Peel the eggs and arrange them with the chard on two plates. Sprinkle Keta caviar over the eggs and drizzle the salad dressing over the chard. Garnish with a touch of chervil before serving.
