Ingredients

  • 4 Matjes
  • 1 Mango
  • 2 Spring Onions
  • 1 tbsp capers
  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • Cayenne pepper

Instructions

    Wash the matjes fillets, pat dry and cut into very fine cubes. Thoroughly wash the spring onions and finely chop most of them; cut a small portion into thin rings. Mix chopped onion greens with the matjes cubes. Chop capers and add to the mixture. Season the matjes mixture with vinegar, oil and cayenne pepper, and let it marinate for about 15 minutes. Peel the mango, remove the flesh from the pit. Dice one half of the mango into cubes, cut the other half into strips. Mix the mango cubes into the matjes tartare.

    Arrange the mango strips on a plate and serve the matjes tartare garnished with onion rings.
