Grilled Mackerel with Fruity Cucumber Salad

Ingredients
- 4 mackerels (about 320 g each)
- 2 tbsp brown sugar
- 4 tbsp light soy sauce
- 3 tbsp Lime juice
- vegetable oil (for grilling)
- 1 cucumber
- 1 pear
- 2 tbsp fish sauce
- 2 tbsp sesame oil
- Salt
- 1 red chili pepper
- 1 tsp Sichuan peppercorns

Rinse the mackerels and pat dry. Score both sides 4-5 times each. If desired, stick soaked wooden skewers to help turn. Mix 1 tbsp sugar with soy sauce and 1 tbsp lime juice and brush onto fish. Grill over oiled grill, turning occasionally, for about 15 minutes.

For the salad, wash cucumber, trim ends, cut into thirds. Slice pieces lengthwise into thin slices or shave. Wash pear, quarter, remove core, slice quarters into fine strips. In a bowl whisk fish sauce with remaining lime juice, oil, sugar and salt to taste. Fold in cucumber and pear, season.

Wash chili pepper, deseed, slice into thin strips. Crush Sichuan peppercorns in mortar.

Arrange salad on plates, place grilled mackerel on top, sprinkle with chili and crushed Sichuan peppercorns, serve.
