Ingredients

  • 1 Swiss chard (about 700 g)
  • Salt
  • 2 handfuls mixed herbs (e.g., parsley, chervil, dill)
  • 1 ball mozzarella (125 g)
  • 10 eggs
  • 50 ml whipping cream
  • pepper (ground)
  • 4 tbsp rapeseed oil
  • fresh herbs (for garnish)

Instructions

    Wash the Swiss chard and cut off the tough stems from the leaves. Blanch the greens in salted water for about 1 minute, drain, rinse with cold water, squeeze out excess moisture, and chop finely. Rinse the herbs, pluck the leaflets, and roughly chop them. Drain the mozzarella and cube it into ~1 cm pieces. Whisk the eggs with the cream well. Season generously with salt and pepper.

    Preheat the oven to 80°C (175°F) in convection mode.

    Heat 1 tbsp of oil in a medium non-stick pan (or an iron grill pan if preferred). Pour about one quarter of the egg mixture into the pan so that it just covers the bottom. Sprinkle roughly one quarter of the chard on top, then add one quarter of the mozzarella and some herbs. Let it cook slowly for 3–4 minutes until set, then remove from the pan and keep warm in the oven. Repeat this process to make three more omelettes. Serve garnished with fresh herbs.
