Sweet Yeast Ring

Ingredients
- 600 g flour
- 1 cube yeast (42 g)
- 0.25 l lukewarm milk
- 100 g sugar
- 100 g butter
- 2 Eggs
- 3 apples
- 2 tbsp lemon juice
- butter for brushing
- 1 egg yolk
- 2 tbsp milk
- powdered sugar
- Chopped almond kernels

Sift the flour into a bowl, create a well in the center. Break the yeast into it and mix with some lukewarm milk, a bit of sugar, and flour from the edges. Cover and let the pre‑starter rise for about 15 minutes in a warm place.

Warm the butter with the remaining milk slightly, then combine with the remaining sugar, flour, eggs, and the pre‑starter to form a dough. Beat vigorously until smooth and detached from the bowl walls. Cover and allow to double in size over approximately 45 minutes in a warm spot. Peel, halve, core, and cut the apples into small pieces; drizzle with lemon juice.

Roll the dough on a floured surface into a large rectangle. Brush with 2–3 tbsp of liquid butter and sprinkle apple pieces over it. Roll from the long side to form a ring, press ends together firmly. Place the ring on parchment‑lined baking sheet, cover and let rise again for about 15 minutes. Then cut evenly around every 3–4 cm.

Preheat the oven to 180 °C (356 °F).

Whisk the egg yolk with milk and brush over the ring; sprinkle powdered sugar and almonds. Bake in the oven for 30–35 minutes until golden brown. Remove and cool.
