Marmalade Cookies

Ingredients
- 375 g flour
- 1 tsp Baking powder
- 200 g sugar
- 1 packet vanilla sugar
- 250 g butter
- 1 egg yolk
- 4 tbsp whipping cream (more if needed)
- 120 g ground almonds (sifted)
- 150 g gooseberry jam
- colored sprinkles

Knead flour, baking powder, sugar, vanilla sugar, butter pieces, egg yolk, cream and ground almonds into a dough. Shape into a ball, wrap in cling film and refrigerate for about 1 hour 30 minutes.

Roll the dough to about 0.5 cm thickness on a floured surface and cut out heart-shaped or round cookies with wavy edges (≈5 cm diameter). Cut hearts from half of the cookies if desired. Place cookies on a baking sheet lined with parchment paper. Sprinkle some sprinkles over the holes, press lightly.

Bake in a preheated oven at 180°C until golden, about 8 minutes. Remove and cool.

Warm the jam and spread it over the cookies without holes. Arrange remaining cookies on top, press slightly and let dry.
