Chocolate Cream

- 0.5 l milk
- 1 Vanilla bean
- 2 Eggs
- 4 egg yolks
- 80 g sugar
- 100 g dark chocolate
- hail sugar (for sprinkling)

Pour the milk into a pot. Split the vanilla bean, scrape out the seeds and add both the seeds and the pod to the milk; slowly bring to a boil, stir in the chopped chocolate and let it melt, then remove the pot from the heat.

Beat the eggs with the yolks and sugar in a bowl using a whisk for 10-15 minutes until a pale yellow, creamy mixture forms. Remove the vanilla bean from the chocolate milk and stir it into the egg cream in a thin stream.

Place the bowl over a gently simmering water bath and whisk for about 15 minutes until the cream thickens properly. Spoon the chocolate cream into four small serving bowls, let cool, then refrigerate. Serve sprinkled with hail sugar.
