- 1 kg pumpkin (peeled and seeded)
- 0.5 l water
- 120 ml vinegar (10%)
- 250 g sugar
- 3 cloves of clove
- 1 cinnamon stick
- 1 tsp lemon zest (in zests)
- 1 cm ginger (diced)

Cut the pumpkin into equal-sized cubes. Place the spices in a tea infuser.

Bring water, vinegar, sugar and spices to a boil, add the pumpkin and simmer over low heat until translucent, testing doneness frequently as cooking times vary by pumpkin variety.
