Sweet Potato Waffles with Avocado, Lamb's Lettuce and Pistachios

The sweet potato waffles with avocado, lamb's lettuce and pistachios from American Pistachio Growers are a great snack. At Spoonsparrow there is the recipe.

Ingredients

  • 300 g sweet potatoes (cooked / preferably steamed)
  • 150 g spelt whole‑grain flour
  • 125 ml buttermilk
  • 1 egg
  • 1 tsp Baking powder
  • 1 tbsp Olive Oil
  • Salt
  • Pepper
  • 1 Avocado
  • 1 small red onion
  • 50 g American pistachios (peeled)
  • 2 handfuls lamb's lettuce

Instructions

    Place sweet potatoes in a bowl and mash finely with a potato masher. Add flour, buttermilk, egg, baking powder and olive oil and mix into a batter. Season with salt and pepper.

    Preheat the waffle iron and bake the batter into 4 crisp waffles.

    Halve the avocado, remove the pit and cut the flesh into strips. Peel the onion and slice thinly into rings. Roughly chop the pistachios. Wash the lamb's lettuce, dry it thoroughly and set aside.

    Place the sweet potato waffles on a plate and top with lamb's lettuce, avocado slices, pistachios and onion rings.
