The sweet potato snack with avocado from Spoonsparrow is the ideal mid‑meal snack that keeps you full for a long time.

Ingredients

  • 450 g sweet potatoes (1 large)
  • 2 tbsp olive oil
  • 1 tsp mild paprika powder
  • Salt
  • Pepper
  • 0.5 Avocado
  • 50 g cream cheese
  • 1 tbsp Lemon Juice
  • 50 g feta
  • 100 g cherry tomatoes
  • 0.5 bunch scallions (100 g)

Instructions

    Clean, wash, and pat dry the sweet potato. Slice it into six about 2 cm thick rounds and cut crosswise slashes on each slice to create a grid pattern. Place the slices on a baking sheet lined with parchment paper.

    Whisk olive oil with paprika, salt, and pepper; brush the mixture over the sweet potato slices. Bake in a preheated oven at 225 °C (fan‑forced 200 °C; gas: level 4) for about 15–20 minutes.

    Meanwhile, remove the pit from half an avocado and scoop out the flesh. Mash the flesh with a fork, then mix in cream cheese and lemon juice, seasoning with salt and pepper to taste.

    Crumble feta, wash and halve cherry tomatoes, and trim scallions into slanted rings. Take the sweet potato slices from the oven and spread the avocado‑cream mixture on top. Garnish with feta, tomatoes, and scallions, then serve as a sweet potato snack.
