- 2 Eggplants
- Sea salt
- 400 ml vegetable oil (for frying)

Wash, trim, and slice the eggplants into very thin rounds. Sprinkle with salt and let sit for about 20 minutes.

Heat the oil in a large pot to 170°C. Pat the eggplant slices dry and fry them in the hot oil until golden yellow. Remove, drain on paper towels, sprinkle with sea salt, stack on a plate, and serve.
