Sweet Potato Fries

Sweet potato fries from ➸ Spoonsparrow are always really good.

Ingredients

  • 1.2 kg sweet potatoes
  • 0.5 tsp Fennel seeds
  • 0.5 tsp Coriander seeds
  • 4 tbsp olive oil
  • 1 Garlic clove
  • Salt
  • pepper (ground)
  • 2 thyme sprigs
  • 1 rosemary sprig
  • coarse Sea salt

Instructions

    Preheat the oven to 200°C with top and bottom heat and line a baking sheet with parchment paper. Peel the sweet potatoes and cut them into sticks about 2 cm thick. In a large bowl, mix the fennel and coriander seeds with the olive oil. Add the crushed garlic, a pinch of salt and pepper, then toss in the potato sticks until well coated. Spread the fries on the baking sheet and bake for about 30 minutes until tender.

    Rinse the thyme and rosemary sprigs, shake off excess water, and strip the leaves or needles. Chop finely and mix with 1 tbsp salt. Remove the finished sweet potato fries from the tray, sprinkle with the herb‑salt mixture, and serve.
