Carrot Orange Soup with Pineapple and Banana

Ingredients

  • 250 g carrots
  • 1 onion
  • 1 Lime
  • 2 tbsp oil
  • 3 tsp Curry powder
  • 700 ml vegetable broth
  • 1 Banana
  • juice of 2 oranges
  • salt, pepper
  • 1 pinch sugar and cumin
  • 150 g fresh pineapple
  • mint (for garnish)

Instructions

    Peel and dice the carrots. Peel and dice the onion. Heat oil in a pot. Sauté the onion. Add the carrots and cook briefly. Sprinkle curry powder over them and sauté for a moment. Pour in the broth, cover, and simmer for 15-20 minutes.

    Peel the banana, cut into pieces, and add to the carrots. Blend everything. Add orange juice and season with salt, pepper, cumin, and sugar; heat through.

    Cut pineapple into small pieces. Grate lime zest, squeeze juice from half a lime. Mix zest and juice with pineapple chunks and spoon onto soup bowls. Carefully ladle the soup over them. Serve garnished with mint.
