Stuffed Squid

Ingredients

  • 1 kg squid tubes
  • 1 old-fashioned roll
  • 2 Garlic cloves
  • 4 anchovy fillets
  • 4 tbsp olive oil
  • 1 egg
  • 1 Organic lemon
  • 2 tbsp breadcrumbs
  • Salt
  • Pepper
  • 4 Basil stems

Instructions

    Rinse the squid tubes under cold water, pat dry and cut 200 g into small pieces.

    Soak the roll in cold water. Peel and finely chop the garlic. Wash the parsley, shake dry and chop. Roughly blend the garlic with the squeezed roll, chopped squid, anchovies, 2 tbsp olive oil, egg and parsley in a blender.

    Wash the lemon hot, pat dry, zest and squeeze out the juice.

    Mix the roll mixture with breadcrumbs, season with 2–3 tbsp lemon juice, salt and pepper, and fill the tubes. Seal them with kitchen twine or close with toothpicks. Brush the tubes with remaining olive oil, season with salt and pepper and grill on a rack under the preheated oven grill for about 20 minutes, turning several times.

    Wash the basil, shake dry and pluck leaves. Distribute lemon zest over four plates, place the tubes on top, remove the toothpicks and garnish with basil. Serve the stuffed squid and enjoy.
